I first had the Safari Cabernet Franc at a wine tasting at the Safari Winery in Fredericksburg, Texas. It is 100% Cabernet Franc from the Curico Valley, Chile.
The wine is a 2018 varietal and is well-rounded with low tannins. It is a deep rich dark red that I call garnet–because it is deeper red than a ruby, it looks like a garnet gem. With a pomegranate nose and a hint of tobacco you can also taste some plum.
This is a really good wine. It surprised me when I tasted it–I typically don’t like 100% Cabernet Franc and only like it in a blend or with a Cabernet Savignon.
You can definitely drink this as a stand alone, but would definitely pair with some strong cheeses, a beef stew, roasted duck or venison.
