Mojitos are a summertime classic. There’s just something really refreshing about the icy-cold lime and mint that’s perfect to enjoy poolside in this scorching Texas heat.
Since the Fourth of July is coming up, I thought, why not make it a bit more patriotic with a red-white-and-blue version?
This Cherry Limeade Mojito has all of the minty freshness of a classic mojito with a pop of red cherry flavoring for both the vibrant color and the classic cherry limeade taste. It’s truly a perfect combination, and the flavors go so well together that you’ll keep coming back for more.
Buddy and I pre-made some of these for our tubing trip last weekend and froze them in adult drink pouches I got off of Amazon to take on the river. It was perfect.
The drink is made with a homemade cherry mint simple syrup. If you’ve never made a simple syrup before, don’t worry–it truly is simple.
We grow buckets and buckets of mint every year just for mojitos, but if you don’t have mint on hand, then you should be able to find packets of fresh mint at your grocery store in the produce section. You’ll need about 2-3 of those packets they sell–one or two for the syrup, depending on how minty you want your syrup, and one for the drinks.
Cherry Limeade Mojito
Ingredients
For the simple syrup:
- ½ c sugar
- ½ c water
- ⅓-½ c fresh mint leaves
- 1 c frozen cherries
For the drink:
- 1 Tbsp cherry mint syrup
- 3 fresh mint leaves
- 1 Tbsp lime juice
- 3 Tbsp club soda (Topo Chico)
- 1 oz white rum (Blue Chair Bay Rum)
- Slice of lime
- Crushed ice
- Fresh blueberry & Maraschino cherry to garnish
Cherry Mint Syrup Directions
- Add ½ cup sugar and ½ cup water to a small pot. Place on low heat and bring to a simmer. Once it simmers, stir the water to help it dissolve.
- Add cherries and mint leaves to the pot. Don’t worry about de-stemming the leaves–just put the whole thing in. Let them steep in the simmering syrup for 5-10 minutes. The longer you let it steep, the stronger the flavor will be.
- Strain the syrup into a small container and allow to cool before using to mix up the mojitos.
- Makes enough syrup for 10-12 drinks.
Cherry Limeade Mojito Directions
- In a highball glass or tumbler, add cherry mint syrup and muddle 3 mint leaves at the bottom.
- Add lime juice, club soda, and rum.
- Squeeze a lime wedge into the drink.
- Top off with crushed ice.
- Garnish with blueberries & maraschino cherries on a bamboo cocktail pick to finish it off.
- Enjoy!
